I have a craving!

Today I was Brian’s Industrious little wife.
First I cleaned the house and did a little scrapbooking – plus made a waffle breakfast and BLT sandwhiches for lunch. Then I went to check the garden and a pear tree I’ve been watching. The pears were ready to pick and I got two Wal-Mart sacks full of them. Next I picked corn – 56 ears of it! There’s still about 1/3 of the crop left to pick when it gets ripe.
  I knew we couldn’t eat that much corn before it went bad so I looked up on the internet how to properly go about freezing it. I thought I would just cut it off the cob and freeze it but it’s a little more involved.


First there’s the shucking and de-silking – I did that out in the garden and spread the shucks out to dry so I can make corn husk dolls later. These ears I’ve actually left in their shuck and hope to roast them tomorrow!

The corn has an enzyme in it that causes it to break down so I had to blanche it (put it in boiling water) for about 5 min. then transfer it to ice water so the corn would stop cooking. It came out of the ice water and into the colander to drain before I cut the corn off.

*Edit* It seems from the comments that people are thinking I shoved the cob through the hole in the pan. That’s not the case, it was just a stand to hold the corn while I cut it with a knife. *end edit*
Here I am cutting the corn off the cob. Don’t know if you can tell, but I’m using an Angel Food cake pan. I set the cob on the middle tube and all the corn fell into the bowl. I got this idea from some online cooking tips place. The corn is wonderful, Brian and I sampled it just as you see it there and it’s so sweet and fresh! Can’t wait to grill it!

A prompting and a blessing.

  I had to run into Big Sandy today to go to the bank and post office. As I started out I was looking forward to listening to my CD as I drove, but I felt this prompting to turn it off and pray. So, reluctantly, I did – all the way there and between the bank and post office.
   While “in town” I thought I would get a dozen eggs because we’re out. As I drove I said, okay God, what do you want to tell me? Well, Dollar General didn’t have any eggs so I went to the little gas and grocery store across the way. As I walked through the produce section I noticed a sign saying they were out of cucumbers. To make a long story short, I offered mine and they were as glad to have them as I was to get rid of them! They even paid me and will want more later!!!
   I think God had me pray just to have me attentive so I would recognize the blessing when it came. It’s so neat to see Him work!

“IT’S A JUNGLE OUT THERE!”


Good rains have made everything nice and lush.
 
The tomatoes made a dump a week or so ago, blessing us with over 50 in
a several day period. Now the cucumbers are coming off the vines in
dozens – literally! We picked 20 of them yesterday and I’m afraid to go
and look today.
   
Our eyes have now turned to the corn – due to come off in around a week. As I estimate, there’s at least 60 ears out there. Brian enjoys pulling the few weeds that make it past our mulch barrier – he likes to keep everything spick and span.
   
Now, what to do with all of our blessings? Give some away, but also save things for later. Tuesday evening I made salsa and canned it along with some whole tomatoes. Bekah and Sam were over today and we made pickles out of an amazing amount of cucumbers. Everything went well and now we have food for the winter.
